A simple, cool and luxuriously creamy dessert, this peach panna cotta is the easiest and most delicious way to indulge this summer!

Deliciously light and creamy, panna cotta is so easy to make and makes a great choice for your summer dinner party entertaining. The name means literally cooked cream in Italian and originates from the Piedmont region in Northern Italy. A good panna cotta will have a ‘just set’ consistency – wobbly, but not solid, and able to hold its shape. Traditionally accompanied by fruit coulis or caramel, it is becoming increasingly popular and flavours are becoming more experimental. This recipe that serves 4, is inspired from Blue Strawberry’s newly launched Spring Summer menu for you to re-create at home and impress your guests.
450g white peaches (or regular if white not available)
10g caster sugar (for the peach purée)
½ lemon – juiced
225g UHT cream
45g caster sugar (for the panna cotta)
2 ¼ leaves of silver gelatine
The Peach Purée:
Peel the peaches and remove the stone, cut into medium sized pieces
Add lemon juice and 10 grams caster sugar
Place in a saucepan and cook on gentle heat until soft
Once soft blend in a food processor or with a stick blender until smooth
Chill the peach purée
TIP: If the peaches catch at the bottom of the pan, add a little bit of water
The Panna Cotta:
Soak the gelatine leaves in ice cold water then bring the cream and sugar to simmer in a non-stick saucepan.
Squeeze the gelatine by hand to remove excess water and add to the cream,
Add 225 gram of peach purée.
Pass through a fine sieve.
Finally, pour into a glass bowl or individual glasses and allow to chill in the fridge for a couple of hours or overnight. Bellissimo!
